"We just want to make damn good pizza and be good humans while we do it. That has always been the whole point."

The three founders of MOZZ, Jared, Erin, and Brett, had each spent many years in the restaurant industry. It's where Jared and Erin's paths first crossed, working line cook and serving jobs at Sundance Resort. They married in 2017 and now have a beautiful family, with one son fittingly named Story. Brett had been perfecting his craft at a top-tier pizzeria in Denver, sharpening his skills and culinary vision. All three knew what great food and real hospitality felt like from the inside, and they weren't willing to settle for anything less.

"We landed on sourdough pizza because it demanded exactly the kind of intention we were after. Naturally leavened dough is slow, complex, and unforgiving. There is no shortcut. For five years we also hand-made every ounce of our mozzarella, over 100,000 pounds total. Pizza felt right because it is, simply put, food for the people. Seemingly simple ingredients: flour, salt, and water make dough. Tomato and salt make sauce. Milk, salt, and acid make cheese. These hold extraordinary potential, and we wanted to make it ours."

In 2019, we opened our first location right here in Downtown Provo. What quickly set us apart wasn't just the food. It's the dining experience as a whole that we refuse to cut corners on. We bus your table, offer cloth napkins, and check in on your meal, fixing anything that might be off. These details are often glossed over or lost to time. But us? We obsess over them. Every dining room has been meticulously hand-designed by Erin, with no two locations the same. Right at the center of this kitchen sits our wood-fired oven, lovingly wrapped in 22,222 hand-laid tiles.

Seven years later, we have four locations spanning from Downtown Provo to Salt Lake City, each one a commitment to the community around it. We take care of our staff and invest in their growth. We promote from within. We support local farmers, pour local soda and beer, and platform fellow small businesses. We care about Utah, the local economy, and the people who walk through our door every single day. We will never sell to private equity. We will never settle for mediocrity. This was never just a business. It is the direct result of three people with a deep love for food who refuse to do anything halfway. From the bottom of our hearts, thank you for seven years. Our only hope is to serve you for many more to come.

Looks like Utah skipped winter, so we decided to skip straight to the good stuff too. This March we're dropping one of the biggest menu refreshes we've done in a long time, celebrating seven years of our original Provo location (more on this later), honoring Pi Day on March 14th the way any self-respecting pizza person would, and announcing something we've been sitting on for a while. MOZZ is going mobile. Breweries, festivals, community events, all the sunny months ahead. We can't wait to unpack this, take a seat.

3.14159... We could keep going but you get the idea. In honor of the most mathematical day of the year, here are five facts about pi and pizza that we think fit the holiday.

  • 01It would take roughly 130 million pizzas, or 1 billion slices, to circle the Earth.
  • 02The earliest known pi approximation was written on an Egyptian papyrus in 1650 BC. They got within 1% accuracy using nothing but rope and stones. We find this unreasonably impressive.
  • 03March 14th is Pi Day. It is also Albert Einstein's birthday.
  • 04There are approximately 3 billion pizzas sold in the US every year. That is about 8 million a day.
  • 05The world record for the largest pizza ever made was 131 feet in diameter and weighed over 51,000 pounds.

Need it fast? We've got you. Pick up orders are available with just one day's notice. Delivery slots open two days out. That said, weekends tend to book 2 to 3 weeks in advance, so if you have a date in mind, lock it in early. Weekdays are usually wide open.

Below are practical tips for choosing the right caterer, planning efficiently, and making the most of your order.

How to choose the right catering service

Not all catering is built with office workflows in mind. Before placing an order, make sure the service covers these three essentials.
1. Clear portions
You should know exactly how many people the order feeds without guessing. Ambiguity creates stress and underfed groups. Strong catering programs often offer packages designed to serve a set number of people, so all you have to do is select the right quantity for your group size.
2. Simple decisions
If the menu feels overwhelming, the process usually is too. For quick and easy ordering, look for prebuilt options that take just one click to add to cart. For a more hands-on approach, especially when navigating preferences or dietary needs, a build-your-own setup may make more sense. The best catering services offer both, so you can choose what works for your situation.
3. Reliable timing
Look for clear delivery and pickup lead times, along with minimum or maximum order details. When this information is easy to find, it’s a good sign the business has the infrastructure and experience to support large group orders.

A realistic planning timeline

Sometimes you’re feeding just a handful of people. Other times, you’re feeding the whole room. If you fall into the latter, don’t panic. You don’t need weeks of prep to get this right. Here’s a simple timeline that works for most office events.

1–2 Weeks Ahead  
Choose the restaurant or caterer, set the budget, confirm the menu, and decide on service style (whether that’s buffet or individually selected meals). This is also the right time to place and schedule the order for pickup or delivery.

At Least 72 Hours Ahead
If the order hasn’t already been scheduled, this is your cutoff for finalizing headcount and placing it. Any closer, and you risk unnecessary last-minute complications. This is also a good time to confirm handoff logistics. i.g. Where is the delivery drop-off point? Who is responsible for pickup? 

Day Of
Make sure plates, napkins, and any other essentials are ready if they weren’t included with your order. We found that serveware is one of the most commonly forgotten items. If your caterer offers disposable serving utensils, it’s worth adding them (especially for larger, family-style orders).

Food is often at the center of office connection. A few small choices can make the experience feel thoughtful rather than transactional.

Avoid over-customizing
A handful of well chosen options works better than endless modifiers. Simplicity keeps execution smooth and the food consistent.

Include dietary friendly options
You don’t need to accommodate every preference, but having one or two clearly labeled options helps everyone feel considered.

Prep plates, napkins, and serving utensils
These are easy to overlook and essential once food arrives. At MOZZ, we always include enough for the guest count plus 10% extra to ensure coverage.

Order generously
Running out creates more stress than leftovers ever will. If a package feeds 8–12 people and your group is exactly 12, consider padding the order with a few extra sides or add-ons to round out the meal and make sure everyone is covered. Not always needed, but always appreciated.

Plan for sharing
When possible, avoid everyone ordering individual dishes. Rounding up individual orders gets complicated. Family-style catering encourages conversation, keeps things relaxed, and makes the meal feel more communal.

Meet Jared

Jared


Jared is a co-founder and co-owner of MOZZ, and his leadership has been instrumental to its success. With a background in fine dining and a sharp eye for all things restaurant, Jared brings something essential to the table: good food, done right.

  If you were a customer back in the day when the first MOZZ location opened it’s doors, you definitely saw him manning the wood fire oven. He could toss a pie in his sleep. Actually, he can make a whole pizza blindfolded. (This isn't a joke. We’ve seen him do it.)

  But Jared’s effort goes far beyond the kitchen. He’s the kind of person who always stands up for the team, makes space for people, and genuinely cares about each guest's experience. 

  Since his son Story was born, Jared’s stepped into a new role: dad life. And he wears it well. We asked him is favorite dad joke, he said: 

"Why did the dad bring a ladder to the restaurant?

Because he heard the food was on another level!"

We’ll let that one linger and move on. Story is an amazing almost-two-year-old with enough sass to run the place. We’re not saying he’s in charge... but we’re also not not saying that.

  So now that you know a bit more about Jared, let’s hear from someone who knows him best—his wife and fellow MOZZ co-founder & co-owner, Erin:

 “Jared is everything I didn’t know I needed, and more than I ever knew I wanted. Sincere, determined, clever, selfless, romantic, bold, and handsome. These are the exact words from my vows. Looking back, they’re also the qualities I hope to pass on to our child. Thankfully, Story has the perfect example in Jared. We are so incredibly lucky to do life with ‘Dada,’ and I truly can’t imagine it any other way.”

Harvey Milk was a groundbreaking civil rights leader and the first openly gay elected official in California. Born in 1930, Milk spent much of his early life hiding his identity, but by the 1970s, he emerged as a fearless advocate for LGBTQ+ rights. After moving to San Francisco, he opened a camera shop in the Castro District—a space that quickly became a community hub. In 1977, Milk was elected to the San Francisco Board of Supervisors, where he fought for housing rights, anti-discrimination laws, and broader equality. His life was tragically cut short in 1978, but his voice and vision sparked a movement that continues to inspire generations.

MOZZ Milk Block

On May 22nd, we take a moment to reflect on Harvey Milk Day and the values we share—a world where everyone feels safe, seen, and welcomed.

This year, that reflection feels especially meaningful. We’re opening a brand new MOZZ location in Salt Lake City’s Milk Block, a downtown space named in Harvey’s honor. The name comes from two places: the legacy of Harvey Milk himself, and the block’s location at the corner of 400 East and Harvey Milk Boulevard. That street earned its name back in May of 2016—a landmark moment for Salt Lake City and the state of Utah. It marked a turning point. One that took open hearts, mutual respect, and a shared belief that all people, no matter who they are, deserve to be welcomed and celebrated.

At MOZZ, we carry that same spirit—creating spaces where everyone feels safe, valued, and at home. Opening at Milk Block means more than just a new location. It’s our way of honoring the legacy beneath our feet and building on it with care.

Doors open this summer, and we couldn’t be more excited.

Erin is one of the co-owners of MOZZ and the creative mind behind its atmosphere—from every design choice to the high standards we hold for hospitality. If you’ve ever been to the Provo location, chances are you’ve met Erin. She’s probably served you, checked on your table, or just stopped to chat. Her vision for what MOZZ should feel like is still the standard we hold ourselves to today.


She’s also the proud mom of Story, her almost-two-year-old. Story was brought into the world with the help of their incredible surrogate, Claire. He's already clocked more time in a pizza kitchen than most adults, and we’re proud to call him our little MOZZ mascot.


Now that you know a little more about Erin, let's hear from someone who knows her best—her husband and MOZZ co-owner, Jared:

We pulled together a few of our favorite bookstores across Northern Utah, including some personal go-tos:

They're created by the high heat (750°F+) of an oven and indicate proper fermentation, hydration, and dough handling. Leopard spots mean the crust is light, airy, and full of flavor—not burnt! Q: What sources did you use to find out how to get funding?

A: “Honestly, the path for us was pretty simple—we mostly relied on self-funding and were lucky to have some amazing people in our lives who believed in us and wanted to help us chase our dream. We’ve worked really hard to get where we are today. In the early days, we were running our first location from open to close, just the three of us. We had to get creative more than a few times, especially when we found out on our one-year anniversary that we had to shut down because of COVID. At the end of the day, it’s really just been about taking the leap, learning as we go, and doing our best to figure it all out along the way.”


Q: Why deny me the brussels sprout pizza this past winter? Also: Are we getting the asparagus pizza soon?

A:  “Totally hear you on the Brussels Sprout Pizza—we loved it too! We like to keep things interesting around here, so you’ll see the menu rotate from time to time. This past winter, the Leek Pizza ended up being the one for us, so we decided to give it a permanent spot (albeit a seasonal one). But don’t worry, the Brussels Sprout could always make a reappearance someday. And yes—the Asparagus Pizza is coming back very soon, and hopefully even better than before. Just between us (and, okay, anyone reading this), we’re adding a Lemon Oil Chimichurri to it this time. It’s gonna take it to the next level… but you didn’t hear it from me.”


Q: Why pizza over other foods?

A: "I knew I loved sourdough bread and wanted to do something with it, but I wasn’t exactly sure what. Erin, Brett, and I were kind of stumped. We knew we wanted to open a restaurant, but we couldn’t quite figure out how to bring it all together. Then one night on a camping road trip, we made some cast iron, wood-fired sourdough pizza for dinner and it just clicked. Six years later, we’re still so grateful we followed that spark, and we couldn’t feel more confident in the decision we made."

A: “We hear you—the Mac & Cheese definitely had its fan club! If you know, you know… we actually brought it back as a special at our Daybreak location not too long ago. 10 Pro Tips for Baking Pizzas at Home

1. Start With Quality Dough

Great pizza starts with great dough. Whether you're making your own or using our handcrafted sourdough, the quality of the dough makes all the difference.

At MOZZ, we cold ferment our dough for three days, allowing it to develop a rich flavor and perfect texture—creating the ideal foundation for an amazing pizza.

2. Bring Your Dough to the Perfect Temperature

Cold dough is tougher to stretch and more prone to tearing. To make shaping your pizza easier, let it rest at room temperature for 1-2 hours before working with it. This allows the dough to relax, making it much more pliable and easier to handle.

3.  Preheat Your Oven (And Use a Stone!)

For that perfect pizzeria-style crust, crank your oven up to 500°F (or as hot as it goes). We bake our pizzas at 750°F for that flawless bake, but this will do the trick! Let your pizza stone preheat for at least 60 minutes. No stone? No worries! Just flip over a baking sheet and use the back as your makeshift pizza stone (do not preheat). The intense heat mimics a woodfire oven, giving your crust that golden perfection. 

 💡 If you're using sourdough, the sugars will caramelize while baking and give you beautiful leopard spots through your crust.

4. Stretch, Don’t Roll

When shaping your dough, skip the rolling pin! Use your hands to gently stretch the dough—this keeps the air bubbles intact for a light, airy crust. Rolling it out with a pin can crush those pockets, making the pizza dense. Just let the dough naturally expand with a little love and patience for the best results.

💡 Check out the graphic below for our favorite way to stretch dough! Create an even ring for your outer crust (about 3/4 of an inch), and stretch the dough as close to that edge as possible. Skip any thin spots and focus on making a smooth, even base.

5. Distribute Your Sauce Evenly

When spreading your sauce, make sure it’s evenly distributed across the dough for a consistent flavor in every bite. Too much sauce in one spot can make the crust soggy, while uneven coverage can leave some bites too dry, or even burn a hole in your base!

6.  Use Quality Cheese

We recommend using low-moisture cheese as it helps prevent excess moisture from making the crust soggy, ensuring a better texture for your thin-crust pizza. Lastly, skip the pre-shredded cheese; it’s packed with anti-caking agents that prevent it from melting properly. Fresh mozzarella melts beautifully, giving your pizza that classic, stretchy texture. For an extra burst of flavor, we recommend finishing with a drizzle of olive oil or a sprinkle of fresh parmesan after baking!

💡 If you're feeling adventurous, try mixing different cheeses! Our favorites are ricotta with gouda or mozzarella. Try a cheese blend like this to create a rich, creamy white pizza base!

7. Be Intentional With Toppings

Resist the urge to pile on a mountain of toppings... less is more! Overloading your pizza can lead to a soggy crust. Stick to a few high-quality toppings: a thin layer of sauce, a generous amount of cheese, and just the right amount of fresh ingredients. This ensures a crispy, well-cooked crust with a perfect balance of flavors.

8. Perfect Your Pizza Transfer

If you want to avoid the dreaded pizza flop when transferring to your oven, use a pizza peel. Sprinkle a little semolina or flour on the peel for easy sliding. Make sure you use quick and fluid movements. Don’t have a peel? No worries! Simply use the back of a baking sheet (yes, the baking sheet is an almighty hack for at-home pizza baking).

9. Good Things Come to Those Who Wait

Try not to take your pizza out too early. Wait until the crust is evenly crisp and the cheese is fully melted. Your toppings can get crispy, and that’s no problem! You can always lift one side of your pizza mid-bake to check that the bottom isn’t burning.

💡  Heavy pizzas put more weight on your base, and too much weight can lead to burning! Be sure to evenly distribute your toppings to help achieve a perfectly cooked crust.

10. Lastly, The Secret to Creating Elevated, Gourmet Pizzas

Some of the best, freshest flavors come after the pizza’s baked. We call these “Finishing touches.”  Finishing touches right after baking elevate your pizza with bursts of flavor and a vibrant look. For example, cooked herbs lose some of their fresh, aromatic punch. Fresh herbs add a bright, fragrant richness that makes the pizza truly pop. Fresh veggies can also add a satisfying crunch, or a topping like crème fraîche can add a refreshing creaminess that complements the warmth of the pizza. These touches are what make your pizza feel gourmet!

💡  Some of our favorite touches we are currently using include fresh lemon zest, a drizzle of honey, or a few fresh basil leaves!
